Trying Something New
For the sake of me I have renamed this recipe to my liking but If we want to be technical about it, it is actually called Caramel Marshmallow Chocolate Dipped Krispy Treats. A mouth-full i know but seriously i prefer my name and that is Krispie Dreams. Sounds delicious right? This recipe is actually easy to make but you need certain things, like before you can even think about making these for the kid you babysit that lives next door you absolutely need a candy thermometer i can tell you right now that thing is so beautiful and make this reciper easier than robbing a bank. Oh and patience if you don't have that walk away now ....good now for those still left get ready to make some dreams come true. Rice Krispy Treats
( Alright now is the time to double this puppy)
3 Tbsp. Butter
10 oz of marshmallows
6 cups of Rice Krispies (or a similar brand)
Melt the buuter over low heat. Add the marshmallows and stir until smooth. Remove from the heat and pour over the rice cereal and stir to coat. Press evenly in a 9x13-inch pan. Repeat to make another pan of treats set aside. *sgt note: you're doubling the ingredients to make 2 pans of rice krispies but don't take them out of the pans yet:
Home made Marshmallows
(Don't Double)
1 1/2 cups of granulated sugar
1/2 cups plus 2 Tbsp of light corn syrup (karo brand preferred)
2 envelops (1/4 oz. each) of unflavored powdered gelatin ( knox brand prefered)
3/4 cups water or 6 oz. of water
1/8 tsp. od salt
1/8 tsp of vanilla extract
Spray a 9x13-inch pan with quick release spray . Line with parchment paper and spray it with quick release as well. Set this aside for the extra marshmallow.
Stir the gelatin in 3 oz. of cold water. Set it aside to bloom (soften) while cooking the sugar mixture.
In a heavy saucepan fitted with a candy thermometer, place sugar, corn syrup, remaining 3 oz. water and 1/8 tsp of salt. Bring to a boil and cook over medium-high heat until athe candy thermometer reaches the softball stage. Put gelatin in a mixing bowl. Pour the sugar mixture over the gelatin and beat on high for 15 minutes, until the volume has increased significantly.
Pour a layer of the marshmallow on the top od one pan of Rice Krispy treats. SEt aside about 1 hour to set up. When the marshmallow is set, gently remove the Krispys from both pans and set them on a covered counter.
*Pour the remaining marshmallow into the sprayed and prepared pan. Let these marshmallows sit at least 8 hours. Turn onto a powdered sugar covered surface. Cut into squares with a clean hot knife, or use dental floss. Roll in powdered sugar to keep from sticking. Marshmallows can be dipped into melted chocolate.
Caramel
( Don't Double)
1 cup of granulated sugar
1 cup of light corn syrup (karo brand prefered)
1 1/2 cups of heavy whipping cream
3 1/2 oz. of sweetened condensed milk
1/2 tsp of fine salt
1 Tbsp. of vanilla extract
Prepare a 9x13-inch pan with parchment paper cut to fit the bottom. DO NOT BUTTER THE PAPER. Set aside. *might have extra caramel so prepare a dish for the extra to go.
In a tall heavy saucepan fitted with a candy thermometer, combine the sugar and syrup and bring to a boil, stirring to dissolve the sugar. Let the sugar syrup continue to boil on medium high heat. In the meantime, in the top of a double boiler combine the whipping cream and condensed milk and scald. When the sugar syru[ begings to turn golden slowly add the cream/milk mixture 1 Tbsp at a time, stirring constantly. Don't let the rolling boil stop. Cook and stir until the mixture reaches 230 degrees F. for sea level (you will need to adjust your altitude).
Take the candy off the heat and stir in the vanilla and the salt. Pour a thin layer (about 1/4 inch)into the prepared pan. Let it stand several hours to firm up. When the candy is firm but still pliable, pick up the parchment with the caramel and turn it upside down onto the remaining pan of krispys. Press down to adhere the caramel/Krispy layer onto the marshmallow/Krispy layer and apply gently pressure to adhere the caramel and marshamllow together. Let set for about 10 minutes and carefully cut into sections with a sharp knife. Melt and temper some dark chocolate and dip one edge of the bar in the chocolate. Let dry and package.
Now you will have a delicious dessert to feed everyone ...even your old cheek-pinching aunty. You will become the favorite child in no time. Enjoy :P!

Food Inc. Review
For those of you who haven't seen food inc. I think you should it is a real eye opener to the food industry and it delves deep into what the leading food compagnies don't what you to see. For me, it was shocking, like chickens stuck in domelike coops without anysunlight and only able to take a few steps than fall because they can't support their own weight. The conditions are terrible surrounded by their own feces would suck for anyone like I wouldn't want to eat a chicken if all it did for its whole life was sit in it's own poop, thats kinda gross. These food compagnies are keeping us all in the dark they hide the ugly truth from everyone because really who wants to hear that all these animals are mistreated or that whenever there is a disease contamination in some meat they will keep sealing it until someone powerful takes a stand and forces them to recall. Children have died because of a simple cheese burger or a harmless chicken nugget and really to the big food industries it doesnt matter to them all they care about is the money and it sickens me. I don't think anyone realizes what is in the food we eat, it is so piled high with chemicals that if we did know it would churn our stomachs. Even allergies i think we can stop blaming it on the food but how the food was grown, the DNA of the food isnt the same all mixed with chemicals until it is unrecongnizable. Food now and food back at the beginning of the 1900 probably wouldn't even taste remotely the same.
Food Philosophy
So I thought I'd tell you guys what food means to me, I mean yah it keeps you alive but really if you think about it, if done properly, food can be an art, a beautiful creation that can wow crowds. I mean a an average person can look at a bunch of food and go "ew those are gross" but a great chef can take a look at the same ingredients and go "i can work with these" and the product is a master piece. Even something small like roasting fruit and adding to a dessert or a making a glaze that can completly change the flavor and make something that some people think that is small memerable. So i guess what I'm trying to say is that food is what you make of it, it can be great and creative and exciting or it can be something boring but in my opinion the adventure of making something all your own is worth the bumps in the road.

Knife Maintenance

Up above is a link to how totake care of your knives and you might be thinking "but sgt. cookies im amazing at taking at taking care of my knives" But you cant trick me!! Like me you probably just open a drawer in your kitchen and throw the knife in waiting for someone else to find it later. But now is the time to turn all that around by actually caring guys. Its not that difficult actually because when you go to the store theyre all like hey buy this wood with it and it actually protects the knife better than sliding around in a drawer..who would have thought . To actually maintain them all you need is a shapening steel and all it does is keep your already sharp knives sharp but a sharpening stone will actually sharpen your knife a bit.

Apple Crisp :)
Alright guys i thought you should know i made some apple crisp today. And i know some of you out there think apple crisp is gross but for me it is the all-time best dessert made with apples. Its like going to your grandmothers and there she is with homemade apple crisp and not that gross store brand stuff that never measures up. So I'm going to post the recipes below an maybe try and get a picture up for you guys.
Apple Crisp
6 cups apples
1/3 cup flour
2/3 cup rolled oats
1/4 tsp cinnamon
1/3 cup butter
1 1/4 cup brown sugar, packed
First cream you butter and sugar, but to get it creamed faster and without a lot of hassle take the butter out oh the fridge 10 minutes before you plan to make it so it can come to room temperature. Next, put in your flour and if you are mixing with an electric blender you might want to mix in the oats with a rubber scraper. That's just my preference, you don't have to but I find it mixes better. Last but not least add the cinnamon and your topping for the apple crisp is complete. Now on to the apples, peel and core the apples. You don't have to peel them i have heard of some recipes that don't but I prefer it peeled. Next what you want to do is slice it into pieces maybe a few millimeters thick and arrange on the bottom of a square glass baking pan. Once you have all the apples in sprinkle on the topping then pop it into the oven at 375 degrees for 40 minutes or until the apples are tender.
